Grilled Romaine Lettuce, this is such a nice dish to serve when barbecuing. The lettuce becomes tender with still a bit of a crunch, delicious with a drizzle of good olive oil, a splash of lemon and sprinkled with parmigiana reggiano.
2 heads of Romaine lettuce, halved lengthwise
3 tbsp olive oil
1 lemon, halved
salt & pepper
4 tbsp grated parmigiano reggiano
Brush the lettuce halves on all sides with olive oil.
Place on a medium hot grill, cut side down for 2-3 minutes.
Turn the lettuce halves and grill the other side for 2 minutes.
Remove from the grill and place the lettuce on a platter.
Sprinkle with salt & pepper, drizzle with the remaining olive oil and squeeze some lemon juice over each lettuce half. Finish with
Brush lettuce halves liberally with 1½ tablespoons olive oil, cut side and back side. Then sprinkle each halve with some salt.
Grill for 3 minutes, cut side down, pressing with your tongs to make sure the lettuce gets a good sear. Flip and grill for one or 2 more minutes.
Finish with a tablespoon of parmesan on each halve and serve immediately
