A simple made meal but very tasteful.
Wild broccoli and green radish in sesame marinade and salmon
Recipe
4 portions
300 g wild broccoli
200 g green radish
4 tsp sesame seed
1 lime
1 tsp Mirim
3 tsp soy sauce
2 teaspoons sugar
4 tablespoons rice syrup
300-350 g fresh salmonloin, sushi quality
1 handful coriander leaves
2 tbsp pickled ginger
300 g wild broccoli
200 g green radish
4 tsp sesame seed
1 lime
1 tsp Mirim
3 tsp soy sauce
2 teaspoons sugar
4 tablespoons rice syrup
300-350 g fresh salmonloin, sushi quality
1 handful coriander leaves
2 tbsp pickled ginger
Clean the broccoli and cook in boiling salted water for approx. 2 minutes, drain and quench. Peel the radish and plane into thin slices.
Roast the sesame seeds in a pan without oil. Squeeze out the lime juice. Mix both with mirim, soy sauce, sugar and rice syrup. Add the broccoli and radish and leave to stand for at least 30 minutes.
Cut salmon into thin slices, arrange on plates with radish and broccoli, serve with fresh coriander and pickled ginger.
Preparation time: approx. 20 minutes.
Marinating: approx. 30 minutes
