Tapas rolls with serrano ham and canned tomatoes

Canned Tomatoes

Tapas rolls with serrano ham and canned tomatoes. Great cocktail snack food, or when you are in the mood for something good

Recipe
Serves 8
1 large sheet/250g of puff pastry, thawed
1/3 cup/80ml drained chopped tomatoes
15 thin slices of Serrano ham
1 cup/90g grated manchego cheese
1 egg
1 tablespoon water
Roll out the sheet of puff pastry to double size.
Spread the chopped tomatoes onto the puff pastry and cover with ham and cheese.
Roll each side into the middle so they meet, you should have a large "sausage".
Wrap in wax paper and chill for 45 minutes to firm up the puff pastry.
Cut the roll into slices of 2 cm and place on a baking tray covered with parchment paper.
Beat egg and water and brush the mixture on top of each slice.
Bake at 400ºF/200ºC for about 18 minutes, or until golden brown.
Serve warm.
