Sake-Steamed Clams

Recipe
1 kg clams
1 red chilipepper, deseeded and cut in fine strips
5 spring onions, chopped
150 ml sake
1 tbsp butter
In a wok, bring the sake with the chili pepper strips to a boil.
Add the clams, cover with a lid and, while shaking the wok occasionally, let the clams steam for 2-3 minutes or until all the clams are opened.
Add the butter and spring onions, and stir until the butter is melted.
Serve immediately.
