Road Trip Adventure


Leave the bustle of the city behind and embrace a slower pace with a good old-fashioned road trip escape. The road less travelled will bring you in touch with the simple pleasures of life. Follow the trail to a seaside summer adventure, enjoying simple feasts on the way in free-and-easy camping style.

175g packet plain tortillas chips
150g mozzarella cheese,

2 ripe avocados, peeled, stoned and diced
½ small papino, peeled, stoned and diced (optional)
1 long red chilli, deseeded and finely diced
1 lemon, juiced
8 drops Tabasco sauce
small bunch coriander , chopped
small red onion, finely chopped
2 tbsp olive oil
salt, to taste

Sour Cream
250ml sour cream
2 tbsp chives, chopped
salt and pepper

Tomato salsa
400g tin chopped tomatoes
2 tbsp jalapeño, from a jar, chopped
1 lime, juiced
½ small red onion, finely chopped
handful coriander , chopped
Place tortilla chips on a baking tray, scatter over the cheese and grill until the cheese has melted and the edges has browned.

Place the diced avocado and papino (if using) in a bowl. In a small mixing bowl, whisk together the chilli, lemon juice, Tabasco sauce, coriander, onion, olive oil and salt. Fold this through the avocado mixture. Serve immediately.

Place the sour cream in a bowl and mix in the chives. Season with salt and pepper.

Tip the chopped tomatoes into a sieve and shake to get rid of the juice. Put in a bowl and add the chopped jalapeños and lime juice. Mix in the chopped red onion and coriander.
