Pork chops with warm slaw

Colorful dish of pork chops with a salad of beets and pears by Paul Lowe of Sweet Paul Magazine. This salad can be served with any type of meat or chicken.

Pork with warm slaw
This slaw can be served with any type of meat or chicken.
2 tablespoons olive oil
1 red onion, chopped
5 beets, peeled and quartered
2 pears, quartered
1/4 cup/60 ml white wine vinegar
2 tablespoons brown sugar
1/4 red cabbage, shredded
4 large pork chops
salt and pepper
fresh thyme
serves 4
Heat the oil in a large pan and saute onion and beets until the onion goes soft.
Add pears and saute 3 minutes.
Add vinegar and sugar and mix well.
Add the cabbage and cook for another 3­4 minutes.
Rub the pork chops with salt and pepper and fry in butter for about 4 minutes on each side.
Serve with the hot slaw.
