Ovenbaked sardines
Recipe
1 kg whole fresh sardines, gutted and scaled
2 tbsp chopped fresh mint leaves
6 cloves of garlic, thinly sliced
2 tablespoon olive oil
sea salt & freshly ground black pepper
juice of 2 lemons
2 lemons, quartered, to serve

Preheat the oven to 180ÂșC.
Place sardines in a baking pan.
Divide garlic and mint leaves evenly over the sardines.
Drizzle with olive oil and lemon juice and sprinkle with sea salt and black pepper.
Bake in the oven for 45 minutes, or until golden and crispy.
Serve with quartered lemons, crusty bread and a green salad.
