Oven roasted fries
1 kg waxy potatoes, cut lengthwise into wedges
salt and pepper
2 tbsp olive oil

Preheat the oven to 200ºC.
Line a large oven tray with parchment paper.
Place potatoe wedges in a large bowl, season generously with salt and pepper, and stir in the olive oil, make sure the potato wedges are covered with olive oil.
Arrange the potato wedges in a single layer on the prepared oven tray and bake in preheated oven for 35-45 minutes, until tender and golden.
Serve immediately with coriander mayonaise.
