Mushroom Pizza

Mushrooms by Dammen

The gold of the forest. The forest offers an abundance of delicacies, so bring your basket and look for nature’s own treasures.

Mushroom pizza

Pizza dough
375 g pizza flour (Tipo 00)
1 tsp dry yeast
1½ tsp salt
2 dl of lukewarm water
3 tbsp olive oil

White pizza sauce
3 dl crème fraîche
1 tbsp white wine or lemon juice
1 tbsp good olive oil
1 garlic clove
2 tbsp fresh oregano
1 tsp salt

Grated parmesan, mushrooms and fresh herbs.

Make the pizza dough first.
Stir the yeast into the lukewarm water and add the oil, flour and salt.
Knead the dough well and let it rise to double size.
Make the pizza sauce by mixing together all the ingredients.
Put the dough on a lightly floured worktop and divide it into six equal pieces.
Roll into round buns.
Sprinkle with a little flour and cover.
Let rise for approximately another 20 minutes.
Push or roll out the buns for round, plate-sized pizza doughs.
Spread the pizza sauce thinly onto the dough, then add the grated parmesan, mushrooms and fresh herbs.
Bake the pizza at 250°C (452°F) for 8-10 minutes or until the pizza crust is crispy and golden brown in color.
