Mini pancakes with citrus and coconut

An addictive dish with grilled lemons & coconut flakes, makes a delicious wintry breakfast

Recipe
1 1/2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Coconut flakes, roasted
Lemons, grilled
Maple syrup, to taste


Sift the flour, baking powder, salt and sugar in a large bowl. Pour in the milk, egg and melted butter and mix until smooth. Heat a frying pan over medium high heat. Pour or scoop the batter into the pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve with roasted coconut flakes, grilled lemons and maple syrup.
