Honey Baked vegetables with Chevre

Honey baked vegetables with chèvre
Serves 4

8 small carrots, peeled and cut in half lengthwise
8 beets, peeled
2 celery roots, peeled and cut in 4 lengthwise
3 tablespoon olive oil
3 tablespoons honey
salt and pepper
3/4 cup/125 g crumbled goat cheese
greens

Preheat oven to 375F/180ºC.
Place carrots, beets and celery in an oven proof dish and drizzle with olive oil and honey.
Sprinkle with a little salt and pepper.
Bake until soft, about 15-20 minutes.
Quarter the beets.
Place the greens in a large bowl, add cheese and the grilled vegetables.
Mix and serve.
