Homemade Ajvar

Fall Dinner

Autumn dish with Nordic flavours

Homemade Ajvar
Serves 4

1 eggplant
2 red peppers (or 4 roasted from a shop)
2 tbsp olive or rapeseed oil
½ red onion, chopped
2 tsp red wine vinegar
½ tsp liquid honey
salt
black pepper, grounded
Pre-heat the oven to 250C. Divide the aubergine into halves and brush the cut surfaces with oil. Put them on a lined baking tray with the cut surfaces down. Divide and seed the peppers. Brush with oil on the peel side and place on the baking tray with the peel side up. Grill in the oven for about 10 minutes, until the peppers start to blacken a bit. Remove from the heat and scrape out the aubergines with a spoon. Peel the peppers and throw out the peels. Mix the peppers and aubergines roughly, add the onion and fold in vinegar and honey. Season with salt and pepper.
