No summer cooking without beets and Havarti cheese on the grill. Its the perfect mix, sweet & nutty beets with the salty Havarti cheese, a Danish cow’s milk cheese that can be sliced, grilled and melted.

Grilled beets with Havari and Mustard Vinaigrette
Serves 4
16 small beets
2 tablespoons olive oil
8 thick slices havari cheese
salt and pepper
4 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon dijon mustard

Peel the beets and rub them in with olive oil.
Place them on a hot grill.They will need 6-8 minutes, turn often so they don't burn.
Grill the havari, about 1 minute on each side.
Place beets and havari on a platter and season with salt and pepper.
In a bowl shake together oil, lemon and mustard, season with salt and pepper.
Drizzle the beets and havari with the vinaigrette and serve.
