Christmas in THE SUN

We eagerly wait for the first fresh peas of the season, spring on a plate.

1 bunch of fresh mint leaves
80ml extra virgin olive oil
500g fresh peas, in their pods
sea salt
freshly ground black pepper
Fill a medium saucepan with water and bring to a boil.
Blanch the mint leaves for 30 seconds, until just wilted and bright green.
Remove from the pan with a slotted spoon.
Place the mint leaves in a food processor.
Process until finely chopped.
Add the olive oil in a thin stream while processing until combined.
Transfer to a bowl and season with salt & pepper to taste.
Fill a medium saucepan with salted water.
Place over high heat and bring to a boil.
Add the peas and cook until the peas are tender, about 2-3 minutes .
Drain in a sieve.
Transfer the peas to a bowl and toss with 1 tbsp mint oil.
Serve warm with lemon wedges on the side.
