Fried Artichokes

Spanisch Bites

Fried mini artichokes sprinkled with salt, served with aioli, coarse bread & chilled white wine, a delicious appetizer for the first summer dinner on our roof terrace.

Fried artichokes

Serves 4

8 mini artichokes
vegetable oil
flaky salt
pinch of chili flakes, optional



Remove and discard the artichoke stems. Peel off lower leaves.
Slice off the top half so that only the light green remains.
Cut the artichokes as thinly as you can lengthwise, use a mandolin if you have one.
Heat the oil in a large pan, the oil is hot enough when it starts bubbling around a small piece of bread.
Deep fry the artichokes in batches, it takes about 1­2 minutes.
Let them drip off on paper.
Sprinkle with salt, & chili flakes if you wish
Great to serve with aioli.
