Foolproof Cheese Fondue


Cheese fondue is one of the greatest cheese dishes for wintry days, and it couldn’t be simpler

300 g grated Gruyere cheese, at room temperature
300 g grated Emmenthaler cheese, at room temperature
400 dl white wine
1 clove of garlic, halved
3 tbsp cornstarch
baguette of artisan bread
Rub the inside of a caquelon, an ceramic fondue pot, with the garlic.
Place wine in caquelon and bring to a boil.
Lower the heat, and slowly add the cheese while stirring with a wooden spoon.
Keep stirring, until the cheese is completely melted, do not let it boil.
Dissolve the cornstarch in water, add to the fondue and keep stirring, until the fondue thickens.
Serve with the bread.
Tip, do as the Swiss and drink tea with the fondue.
