Chocolate Cake

Strawberry and Chocolate cakes

An espresso with a piece of chocolate cake, perfect for cold winter days

Chocolate Cake
For the cake:
2 tablespoons cocoa
2 tablespoons milk
1 cup/250g butter
1 cup /250g caster sugar
5 eggs, beaten
2 cups /270g self rising flour
For the icing:
375g soft butter
4 ½ cups/750g icing sugar
1/3 cup/ 40 g cocoa powder
3 tablespoons milk

To make the cake:
Preheat oven to 180ºC.
Cream butter and sugar with an electric beater.
Gradually add eggs mixing well.
Gradually add sifted flour and cocoa, stirring thoroughly.
Add the milk.
Grease and line a 22cm round tin, add the cake batter and bake for 1 1/2 – 2 hours, test with a skewer, when it comes out clean the cake is done.
Set apart and allow to cool.
To make the icing:
Beat the soft butter using an electric beater, until light and fluffy.
Gradually beat in icing sugar and cocoa, then add the milk until combined.
When the is cake is cool, spread the icing over cake with a hot knife.
