This recipe for a salad with apples, green beans, ,sliced almonds and bacon-wrapped goat’s cheese takes broccoli from bland to delicious.
Broccoli with bacon-wrapped goats cheese
Recipe
Broccoli-apple salad with bacon-wrapped goats cheese
Serves 4
200 g green beans
1 broccoli
40 g sliced almonds
4 tbsp lemon juice
1 tbsp Dijon mustard
7 tbsp olive oil
1 apple
1 log soft goats cheese (200 g)
8 slices of bacon
2 tbsp sunflower oil
salt and freshly ground pepper
Serves 4

4 tbsp lemon juice
1 tbsp Dijon mustard
7 tbsp olive oil
1 apple
1 log soft goats cheese (200 g)
8 slices of bacon
2 tbsp sunflower oil

Clean the green beans.
Cook for approximately 8 minutes in plenty of salted water until just tender.
Pour off water after cooking, and shortly rinse with cold water, then drain well.
Clean broccoli and divide into florets.
Boil in plenty of salted water for approximately 4 minutes until just tender.
Pour off the water, rinse with cold water and drain thoroughly.
Without oil, roast almonds in a pan, and take them out.
Whisk lemon juice and mustard with olive oil.
Season with salt and pepper.
Grate the apple into thin slices.
Instantly combine with the beans, broccoli and the marinade.
Cut the cheese in 8 pieces and half the slices again.
Cut the bacon slices in half and wrap each around one piece of cheese.
Arrange the salad on plates.
Heat the oil in a large pan.
Fry the chunks of cheese 1-2 minutes on each side until crispy.
Arrange the cheese on the salad and serve immediately.
