Bilberries and Blueberries

Recipe for a Blueberry Apple Tart, we’ve used our apples from the garden and blueberries from the freezer. This is a very quick recipe using ready made pie crust that we brought home from France, but it works with puff pastry as wel.

6-8 apple, depending on their size
handful of blueberries
ready made pie crust
zest of 1 lemon
juice of 1 lemon,
3 tbsp sugar
Peel and core the apples.
Chop 3-4 apples into cubes.
Place the apple cubes in a saucepan with 1 tbsp sugar, the lemon zest and a splash of water.
Bring to a boil and let the apples simmer for about 8-10 minutes, or until soft.
Mash them roughly with a fork and set aside.
Slice the rest of the apples thinly and drop then in a bowl with the lemon juice.
Line a 28 cm tart pan with the pie crust and punch holes with a fork in the dough.
Divide the mashed apples over the pie crust, add the blueberries and arrange the apple slices
in concentric circles over the tart.
Sprinkle with 1-2 tbsp of sugar and bake in preheated oven, 180ºC, for 30 minutes or until golden.
