Blinis with Sturgeon

Blinis are yeasted pancakes, traditionally from Russia, often made from buckwheat flour, and originally served with caviar. Make batches of them as they freeze well.

Recipe
Blinis with Sturgeon
Makes about 24
1 teaspoon dry yeast
1/4 cup/60ml warm water
1/2 cup/70 g plain flour
pinch of salt
1/3 cup/75g full fat yoghurt
1 tablespoon melted butter
1 large egg, separated
creme fraiche
1/2 pound/225g smoked sturgeon,
fresh chives, chopped, 1-2 tbsp
lemon zest
salt and pepper

Pour the water in a bowl and sprinkle with the yeast.
Let stand until foamy.
In a large bowl mix together yoghurt, butter and egg yolk.
Add the yeast, flour and salt and mix well.
Cover with plastic and leave for 30 minutes.
Beat egg white until stiff peaks.
Stir gently into the mixture.
Heat a pan and cook tablespoon large pancakes.
They will take about 2 minutes on each side.
Place on a tray and add creme fraiche, sturgeon, chives and lemon
zest.
Finish with some salt and pepper
