You should absolutely make Bellini's

You should absolutely make Bellini’s during the coming days, the peaches are at their best and it’s such an utterly delicious drink. And dead easy to make.

 

Recipe
ripe white peaches
a bottle of prosecco
Skin a ripe peach, preferably a white peach but any good ripe peach will do. Place in the kitchen machine and process to a smooth purée.
Place in refrigerator until completely chilled.
Spoon the purée in glasses and fill up with chilled prosecco.
Summer in a glass.

The Bellini was invented sometime between 1934 and 1948 by Giuseppe Cipriani, founder of Harry’s Bar in Venice, Italy
