Apples by Dammen

Apples are in season now, do try this delicious and simple recipe.

1.5 dl coconutflower sugar
1 dl butter
4 dl cottage cheese
2 eggs
2 tsp grated ginger
grated rind from 1 lemon
2 dl almond flour
2 dl glutenfree flour blend
2 tsp bakingpowder
1 tsp bakingsoda
1 tsp salt
1 grated apple
1 diced apple

Blend soft butter, sugar, cottage cheese, eggs, grated ginger and lemon rind in a bowl.
Add rest of the dry ingredients in another bowl with the apples.
Blend the wet and the dry ingredients together with a wooden spoon without stirring too much.
Bake it in a bread pan covered with baking paper for 50-55 minutes in 180ÂșC.
